Baked Asparagus with Parmesan
1 lb asparagus spears, trimmed
2 Tbsp olive oil
Sea salt
Freshly ground pepper
1-2 ounces shredded or grated parmesan
Preheat ove to 400 degrees.
Break or cut off the woody ends of the asparagus spears and place on baking sheet.
Drizzle with olive oil, add salt & pepper to taste, and toss/mix to coat.
Top with parmesan.
Bake until the cheese begins to brown, about 8-10 minutes.

Oh, how I love asparagus! When we first came to live here, we were surrounded by fields of vines that dated from the 1950s. However, prior to that, the fields were planted with asparagus and it still grew here and there. You could walk for miles up and down between the rows of vines hunting for asparagus and take lunch home with you. My personal best was slightly over 3kg.
The vines have all since been replaced by newer vines and the asparagus has all but melted away. Sigh.
